A grease trap, also known as grease interceptor is a tank designed to intercept or trap most fats, oils, and greases (F.O.G.) from entering the municipal sewer system. Kitchen wastewater contains varying amounts of F.O.G. that flow into the grease trap. The grease trap then separates the F.O.G. from the water, retaining the F.O.G. while simultaneously allowing the wastewater to flow through the grease trap and into the municipal sewer system.
